"Merry Monks is a Belgian-style Tripel. Pilsner malt combined with an abbey yeast strain yields a remarkable and complex flavor packed with notes of spice, banana and pear. Nicely balanced, with a moderate-to-dry finish, Merry Monks is bottle-conditioned which imparts a special effervescence to the beer and a creamier carbonation. The ongoing fermentation inside the bottle will change the character of the beer as it ages, and you'll find it becomes dryer with age. You may want to lay down a few bottles for future evaluation. We suggest storing at cellar temperatures — around 55 °F — and away from light." —brewer
"Appearance: Hazed-over golden orange, a few particles of sediment float around but disperse after the carbonation throws it around. Tight tiny bubble white lace sticks around the rim of the glass and keeps for the duration.

"Smell: Big medicinal phenolic aroma, plum fruitiness with both sweet and tart. Spicy sweet estery alcohol is perfumey. Very aromatic and almost pungent in the nose.

"Taste: Moderate body, aggressively crisp with a sharp carbonation that stays at a medium-high level. Nutty and earthy from the yeast. Herbal and medicinal from the phenols. Peppery with a quick flash of sugar syrup from the sweet n' spicy alcohol, relatively dry beer though a minute amount of residuals are apparent. Fruitiness borders on banana, pineapple and plum. Hops are minimal and are hardly noticeable. Dry clove and peppery flavours are dominant with a nutty dry finish. Alcohol warms more and more throughout the beer with mild solvent flavours from the fusel part of the alcohol.

"Notes: Certainly a treat to try another brewery's triple, remarkably complex perhaps too complex if that is possible. It seems like most of the flavours are fighting for dominance and no one prevails. If this one was to be laid down for several more months it would have been a bit more melded.
