The 2003 Covey Run Cabernet-Merlot is actually a blend of three grape varieties. Cabernet Sauvignon (43%) is blended for structure (acid and tannin), Merlot (42%) is blended for roundness and richness, and Cabernet Franc (15%) is blended for fruitiness and spiciness. These same varietals are the classic blending components used by vignerons in Bordeaux to make the lovely red wines produced there.

Sweet berry and cherry flavors meld with a hint of vanilla and smoke and complement many different cuisines aside from the usual recommendation of red meats. Some other menu pairings are salmon, pasta and other rich, meaty or oily dishes. The spicy, juicy berry flavors and smoky aroma of the wine echo similar flavors in these foods.
