| "The color is deep ruby red. The nose is persistent with powerful aromas such as licorice, spices, minerals, vanilla, and ripe black fruits. Big bodied with decisive tannins, but well-balanced by the richness of the aromas and great complexity that increases as the wine opens up in the bottle and the glass. It is in- credibly long and tangy on the finish. For better enjoyment, this wine should be uncorked a few hours be- fore the meal. Perfect with roasted and stewed red meats as well as with hard cheeses from raw milk such as cheddar and provolone." -winemaker |
