Gueuzerie Tilquin Oude Gueuze Tilquin a l'Ancienne

"The Gueuze Tilquin à l’ancienne is a spontaneous fermentation beer obtained from the blending of 1, 2 and 3 year old lambics. Unfiltered and unpasteurized, it is re-fermented in the bottle for a minimum period of 6 months. The lambics used were fermented and matured in our own oak barrels at the blendery. They are made from worts brewed by Boon, Lindemans, Girardin and Cantillon. The taste is tart and dry but has a certain roundness that makes this Gueuze à l’ancienne particularly accessible for non-experts. It will also delight fans of the genre for its sweet complexity. It also has a slight dry bitterness because of the youth of the oak barrels used, as they still release some tannins. It has a fresh lemony nose." —brewer

"Brewed by women, this heavy blonde beer has 8.5% ABV and second fermentation in the bottle. This beer has a pale blonde colour and fine, white creamy and lacing foam. The aroma is very balanced, with a fruity and flowery background and a first impression of Chardonnay, that further evolves to a spicy, mild hop aroma. The flavour is very balanced with fruity notes of apple and Chardonnay grapes. Deliria has a fine, mildly bitter aftertaste and a wonderful, round mouth feeling with a nice evolution. Huyghe Delirium Nocturnum

"Dark brown-red. A compact white-yellow, stable and lacing head. Touches of caramel, mocha and chocolate on the nose. Spices such as liquorice and coriander are also present. Initially, a very good mouthfeel of alcohol and softness. This is followed by an increasing bitterness, partially from the hop, but also from the roasted malt and chocolate malt. Lindemans Framboise Lambic

"Long before hops were common in most beers, various fruits and vegetables were used to season beers. The acidity of Lambic beers blends perfectly with raspberries. Magnificent aroma, delicate palate of raspberries with undertones of fruity acidity; elegant, sparkling clean natural taste. Lindemans Kriek Lambic

"In origin, this sweet-acidic drink was obtained by adding fresh black cherries to a barrel Lambic of 6 months young. The addition of fruits provokes a new fermentation in the oak barrels. After another 8 to 12 months, only peels and stones are left and the Kriek-Lambic is ready to be filtered and bottled. The residual sugar can be adjusted with straight-on fruit juice to start a refermentation in the bottle. This traditional type of fruit beer is more acidic and less fruity. Because of the limited availability of the Schaerbeekse cherries and so to brew a less sour and more fruity Lambic beer, Lindemans farm brewery developed a unique alternative natural method using pure cherry juice from unfrozen cherries. This straight cherry juice is blended with selected Lambic of different ages. Kriek has a pink-red color and a delicious taste of sparkling cherry champagne. Serve cold at 36 °F." —brewer
