Musella Amarone "Senza Titolo" 2008

"This wine is born from the idea of producing Amarone in the most natural and traditional way possible, starting first from a rigorous grape selection. The second selection is done at the moment of pressing, 100 days after the harvest, when four or five people discard the single grapes if not perfectly healthy. The soft pressing is done by feet, leaving the dry stems in to increase tannin, and the fermentation is with indigenous yeasts in a conical oak  fermenting vat. We do daily pressing by hand until the natural slowing of the fermentation after a few months. This wine rests at least 3 years in a 700L barrel. It is bottled unfined and unfiltered." —winemaker
