"Ashbourne's aim is for its two wines – the Ashbourne and the Ashbourne Sandstone – to belong firmly in the company of the world's great benchmarks, without in any way replicating them or seeking to taste like them. Both wines are only released when bottle ageing has created additional complexity and appealing secondary character. The Ashbourne is grown on extremely clay-rich, stony soils, well suited to nursing a high level of refinement and classic styling out of Pinotage, while the Ashbourne Sandstone is grown on quartzitic sandstone soils which emphasise the nervous energy and minerality of Sauvignon Blanc." —winemaker

Ashbourne Sandstone is a white wine blend, predominantly Sauvignon Blanc with Chardonnay, and appropriately named for the sandstone soil that nourishes the vines. Although its varietal blend might invite comparisons to white Bordeaux, Sandstone is characteristically South African. With the Sauvignon Blanc's distinctive gooseberry note at the forefront, the 2009 Sandstone incorporates tones of ripe grapefruit, zesty citrus, and fragrant honey alongside a hint of cool minerality. With no oak in the winemaking, what you get is simply pure fruit that closes with a tart lemony kiss.
"Bright, light yellow. Inviting nose shows a leesy oatmeal quality to the Sauvignon-driven aromas of citrus zest, gooseberry and herbs. Creamy and plush on the palate, conveying a low-acid texture to the concentrated flavors of lemon oil, green olive and oatmeal. Has plenty of citrus energy and saline minerality to maintain its shape and balance. Fully mature but has the stuffing to become a very interesting old wine. "The 2009 Sandstone (Sauvignon Blanc) is a blend of 80% Sauvignon Blanc and 20% Chardonnay, the latter matured in clay amphora for around 6 months and the rest in stainless steel. It was kept on the lees for six months with no malolactic fermentation. The idea is to have two or three years bottle maturation. It has a potent nose: nettle, gooseberry, sous-bois and grass clippings emerging at full throttle. The palate is well-balanced with nettle and Mirin notes on the entry, then later dried honey, grilled walnut, tinned peas and asparagus coming through. As usual, this is very distinctive, perhaps not to everyone’s taste, but certainly it has its place." —Neal Martin, The Wine Advocate
