Chateau Pavie 2016

"Château Pavie has diverse terroirs: 1.) Terroir typical of the Saint-Emilion limestone plateau composed of clay-limestone soil on an asteriated limestone subsoil. Located at an altitude of approximately 85 meters above the Dordogne River. 2.) Terroir called "milieu de côte" (middle of the slope) located approximately 55 meters above the Dordogne and composed of very fine brown limestone. Many plots have been re-planted. The vines are trained high to increase the leaf canopy. Pruned to six spurs for old vines and two for young ones, green harvesting, leaf thinning, as well as picking and sorting by hand. The way Château Pavie is fermented depends on the vintage. It is kept on the skins for three weeks in 20 temperature-controlled wooden vats. Malolactic fermentation in barrel and the wine is aged, depending on the vintages in 70% to 100% new oak, for 18 - 32 months." —winemaker

Dana Estates Hershey Vineyard Cabernet Sauvignon 2011

"The nose abounds with black berry, dark red cherry, dry earth and dusty warm stones. Nice weight in the mid palate builds through layers of fruit, candied cherry, warm caramel and espresso. The Howell Mountain tannin profile is pronounced, yet well integrated and precise. This expression of Hershey should age effortlessly for 13-18 years and reward those who can hold on for longer." —winemaker

Dom Ruinart Blanc de Blancs 2004

"The color of Dom Ruinart 2004 is a luminous yellow with pale green reflections. At first the nose reveals the sweet, gentle notes of chestnut, coconut and fresh bread. This biscuity side to the wine very quickly gives way to the aromas of flowers (iris, lily-of-the valley and the flowers of Seville orange trees) and citrus fruits (bergamot and citron). Just beneath the surface several mineral (wet rock and flint) and iodized saline notes make an appearance." —winemaker

Shafer Hillside Select Cabernet Sauvignon 2014

"The 2014 vintage opens with an aromatic wave of deep, intense fruit and spices such as black plum, blackberry pie filling, cassis, and anise, along with nutmeg, dark toast, and dried rose petals. The energy in the nose is just as dramatic in the mouth with open, beautiful ripeness, mocha, briar fruit, pomegranate, baking spice, and ripe tannins that collectors will recognize as offering the promise of sensational things to come in the cellar." —winemaker
