Armand de Brignac Rose (Ace of Spades)

"Armand de Brignac Rosé is an elegant and delicious “basket of red fruits” as described by Chef de Cave, Jean-Jacques Cattier. The vibrant rose hue is given from the inclusion of slightly more than 15% of still red wine, harvested from old Pinot Noir vines that produce fruit with great flavor intensity. The current assemblage comprises 50% Pinot Noir, 40% Pinot Meunier and 10% Chardonnay and is a trio of vintages; 2009, 2010 & 2012.

Strawberry, currants and cherry abound on the nose, with floral hints and a touch of sweet almond. The red grape dominance brings a structured palate filled with black fruits, cherries and hints of baked pastry. The Chardonnay brings the lightness and elegance.

Ideal as an aperitif or pairs beautifully with truffled veal, duck confit and wild salmon." —winery

Bruno Paillard Premiere Cuvee

"The golden straw colour reveals a high presence of chardonnay and the exclusive use of the first pressing. The fine bubbles are due to a strict selection of the best grapes, perfectly controlled temperature in the cellar and very long ageing. The primary aromas reveal the citrus fruits of Chardonnay: lime and grapefruit. Then the red fruits aromas of Pinot Noir appear: redcurrant, raspberry, morello cherries. When left to open up in the glass, the wine shows hints of dried fruits, sometimes exotic, from Pinot Meunier. Lively and vivacious on the palate, thanks to a low dosage, the aromas on the nose are echoed in the mouth. Primary flavours of citrus, almonds, and toasted bread, very soon joined by redcurrant jelly but also dark fruits like cherry, fig and blackberry. Whilst the wine opens up in the glass, and gets warmer, it expresses light plum and pear flavours. The palate is full, quite long with a very clean finish." —winemaker

Dom Perignon Rose 2005

"Tropical notes of guava and curry leaf melt away into more classical ones of zest and very ripe stone fruit. Cocoa and toasted spices complement the whole. The wine has a bracing vinosity. Its initial richness expands and affirms itself, becoming more physical, powerful and structured. It has remarkable length in the mouth, with a touch of licorice and a backdrop of juicy, bitter blood orange. Dom Pérignon Rosé 2005 is extremely physical. This tactile sensation reveals itself through a fresh acidity, grainy tannins and sappiness. The vibrant structure of the wine is unveiled when accompanied with seafood such as an elegant langoustine paired with hummus or with a devilled egg, Prunier caviar and raw asparagus salad. Paired with meat, for instance a charred Waygu beef sashimi with chilled spiced turnip greens, Rosé 2005 offers its smoky minerality up front." —winemaker

This biscuity side to the wine very quickly gives way to the aromas of flowers (iris, lily-of-the valley and the flowers of Seville orange trees) and citrus fruits (bergamot and citron).
